Allergy Free Peanut Butter Cookies

My sisters Hannah and Caroline have been having a lot of stomach problems lately, but we are not sure why. We think it might be their diet so they have now gone on a elimination diet to find out. Last Fall we all went on the SCD diet and they didn’t have any stomach problems, but none of us had any energy so we went off the diet. Hannah and Caroline have gone off of grain, corn, soy, egg and dairy. I have been worried about my sisters so I hope this will help.

I have been feeling bad for them today since they don’t have much food at the house they can eat so I found a recipe for cookies. I made these cookies before when we were all on a gluten-free diet and they were wonderful, but they have eggs so Hannah and Caroline could not eat them so I changed the recipe. This recipe does have peanuts, so please make sure anyone you are serving them to does not have a nut allergy.

Egg, Soy, Grain, Corn, Dairy free Peanut Butter Banana Cookies that still taste like cookies!

Ingredients
  • 1 cup peanut butter
  • 1 cup sugar plus extra to roll cookies in
  • 1 teaspoon baking powder
  • 4 Tablespoons mashed banana
Instructions
  1. Preheat the oven to 350. Combine all of the ingredients. scoop the cookies with a mini ice cream scoop and roll in sugar. Place on a cookie sheet and cook until the edges are set up. Next time I want to put carob chips in them. Enjoy!
